
I am continuing to wish it was summer, so that I can jump on the tiki drink trend. Naturally I was really excited when I saw a recipe for passion fruit syrup. I don’t think I’ve ever actually seen a passion fruit before, but I was able to track some down at our nearby Whole Foods.
Passion Fruit Syrup
2 cups sugar (I used a mix of cane and turbinado)
1 part water
Seeds of 8 passion fruitsPut the sugar and water in a saucepan over medium-high heat, stirring frequently. When the sugar is dissolved, add in half of the passion fruit seeds and simmer for a few minutes. Take off heat and add the rest of the seeds. Cover, and leave to cool for 2 hours

Pretty simple, right? Plus, this stuff smells amazing, kind of like an exotic orange juice with a sweet tangy taste. But after making your passion fruit syrup, I bet you’re wondering what to do with it! Here’s a great cocktail from Beachbum Berry’s latest collection Beachbum Berry Remixed: the Port Light.
Port Light
1 oz lemon juice
1/2 oz passion fruit syrup
1/4 oz grenadine
1.5 oz Bourbon
1 cup crushed icePut all of that in a blender for five seconds, dump it into a rocks glass, and top up with extra ice.
This Port Light cocktail is a wonderful balance between the Bourbon, citrus and sweet. Perfect for the warmer weather!
I wonder what I can whip up with that syrup. I love alcoholic beverages, but I can’t stand grenadine. It reminds me of cough syrup :/

This syrup is a million times better than grenadine! For one thing, it’s made form the most beautiful smelling (and tasting) of fresh fruits. You should definitely give it a try
Store bough grenadine can be pretty gross (too sweet!), however, I think homemade grenadine is really great. It has a lot more depth of flavor.
