Fine Fixin’s: Low Cal Cake

For years we’ve been making cakes the old fashioned way: with a Betty Crocker cake mix. But all of that’s about to change. Now we’re using Betty Crocker Cake Mix and Diet Soda. Alright, so maybe this combination isn’t going to make the best cake ever, but it will make a pretty tasty low cal alternative to your typical cake, whether out of the box or from scratch. And that’s not even the best part. Did you know that diet soda comes in an endless variety of flavors? Did you know that cake mix also comes in a seemingly endless variety of flavors? Sounds like you have double infinite combo possibilities, right?

Our combination of choice, you ask? Lemon cake and diet 7-up, of course. Sarah actually found this idea from my mom on Pinterest, and it looks like it has been making the rounds as a low point Weight Watchers dessert. There seems to be some variation on how much soda to use, so you might try experimenting. The recipe we used called for 1 can of soda (although some seem to call for up to 24oz, which might actually be better) and one box o’ mix. Stir that together and put it in a 350F oven for 20 minutes or so. This is the easiest thing to make, ever. Definitely worth a try if you like dessert, and who doesn’t like dessert.
